THE LABORATORIES - The pride of the school, all of them designed giving a great importance to state-of-the-art technology, enhancing the unique halls of the Castle: each piece of furniture and of equipment used is totally MADE IN ITALY and produced by major Italian companies. GROUND FLOOR: CULTURAL AND GASTRONOMIC LIBRARY, WITH BOOKS IN ITALIAN AND IN ENGLISH, AN INTERNET CORNER IN THE DECONSECRATED CHAPEL OF THE CASTLE, READING HALL AND A 60-SEAT CONFERENCE HALL. THE STONE-AND-MARBLE STAIRCASE LEADS TO THE FIRST FLOOR OF THE CASTLE WHERE, BESIDE A LARGE RECEPTION AREA, WE CAN FIND: • LECTURE AND DEMO HALL - 40 SEAT Conceived as a multi-function space for cooking demos, meetings, conferences and various events, gives the audience the opportunity to follow on its maxi-screen the performances of the chefs busy in preparing their recipes at their work-station designed by IFSE, with a state-of-the-art oven, blast chiller and several pieces of equipment by Sirman, all enclosed in a crystal box to protect the wooden 17th century floors and ceilings of one of the most beautiful rooms of the castle.
• PASTRY LABORATORY It is the heart of the “white art” preparations and hosts important pieces of equipment for the preparation of pastry and baked products. A sheeter for puff-pastry, two kneading machines – one by Domino - an oven with the floor made in refractory stone (Rinaldi Superforni) and specific openings for pizza, panettone and pastry products; ice-cream machine (Carpigiani), blast-chiller, vacuum machine by Orved, mixers and micro-wave ovens by Sirman to complete the room equipment. Work tables in stainless steel and marble for any kind of preparation give the students the opportunity to prepare the various kinds of recipes illustrated by IFSE pastry chefs. • WINE AND OIL TASTING ROOM Featuring 16 individual tasting desks equipped with drawers for the oil-and-wine tasting glasses by Bormioli and entirely designed by IFSE in a unique style, the room boasts a lighting system enabling the students to carry out any kind of visual exam at its best. • BOUVETTE- COFFEE CORNER Frescoed and warmly-lit room with a bar-desk designed by IFSE and produced by Fratelli Groppo, equipped with Lavazza coffee-machines and a small fridge. Students have Lavazza coffee and Lauretana mineral water at their disposal for free during their breaks between classes. • SPONSOR GALLERY A 30mt-long gallery hosts numerous crystal showcases resting on upside-down pyramids, a clear reference to the food pyramid. Each pyramid displays the products of the companies that have trusted and supported IFSE and its activities all over the world. • LOCKER ROOM AND BATHROOMS Each student has a locker at his/her disposal to keep his/her clothes and personal belongings. Also the bathrooms on each floor of the castle were built with the utmost care and a search for the ultimate Italian design.
A LARGE AND MODERN RESIN STAIRCASE, AN OLD STONE STAIRCASE OR A LIFT LEAD TO THE SECOND FLOOR OF THE CASTLE, THAT HOSTS:
• PRACTICAL CLASSROOM Totally innovative, specifically designed by the technicians of INOXPIU’ Srl – Trento It features 16 individual work stations, each of them equipped with pots, pans and utensils, plus monitors to follow step by step what the instructor is doing. Each student has his/her own space to work with the maximum comfort and efficiency. The Smeg SpA ovens give each student the opportunity to bake/roast his/her own preparations. In this classroom, all students can use a full kit of utensils, among which the knives by the Bufalo leading industry, a whole set of pots and pans, cutting-boards and much more.
• CENTRAL MAIN KITCHEN Set up in one of the most attracting rooms of the castle, it is the dream-kitchen of every chef: the INOXPIU’ experts from Trento (Italy) have worked hard paying the utmost attention to the space and equipment layout, with a 4x2mt. central stove featuring induction hot plates, pasta cookers, drawers for long, low-temperature coking methods, braiser and grills. Totally made in stainless steel and boasting state-of-the-art equipment, it offers the best of the cooking technology. It also hosts an oven by CONVOTHERM with its numberless cooking opportunities, micro-wave ovens and various utensils by SIRMAN, plus a vacuum-packing machine by ORVED. The ancient wooden ceiling rounds off and frames this one-of-a-kind kitchen.
• INTERACTIVE DINING ROOM Something sbsolutely new in the food-service industry, this dining room features a wireless communication system with the kitchen. Guests sitting at their tables can talk directly to the chef and have all the information on the dishes that are being served. Moreover, on a large screen placed on a wall, they can follow the preparation of the different courses step by step and watch the chefs working in the kitchen. • CENTRAL WASHING AREA A great care was taken also in setting up this often neglected area; here, beside sinks for washing pots and pans, we can find the newest among the professional dish-washers, presented at Host 2009 and produced by the leading company SMEG SpA. • COFFEE CORNER Also the second floor hosts a coffee corner, to offer the students and the restaurant guests the opportunity to enjoy an excellent cup of LAVAZZA coffee. A fresh glass of LAURETANA mineral water and some canapés or pastries made with the flours by MOLINO QUAGLIA make your stay at the Institute even more pleasant.
